Sweet Baked Oatmeal

Adapted from King Arthur Flour Whole Grain Baking's Baked Oatmeal recipe.

Very good.

  • 1/2 cup Steel Cut Oats*
  • 2 tbs Butter
  • 2 cups Water
  • 1 1/2 cups Rolled (Old-Fashioned) Oats
  • 1/4 cup + 2 tbs Brown Sugar
  • 2 small Apples, unpeeled but cored and diced
  • 1/4 cup Dried Apricots, Unsweetened
  • 2 tbs Crystallized Ginger, minced
  • 1/2 tsp Salt
  • 2 tsp Cinnamon, ground
  • 1/4 tsp Nutmeg, ground
  • a sprinkle of Cloves, ground
  • 1 large Egg (Nutritional info assumes Omega-3 enriched)
  • 1/4 cup Nonfat Milk (Vit A & D Enriched)
  • 1 tsp Vanilla Extract

Preheat Oven to 350 degrees and spray a 8 X 8 pan with Pam.

Boil the water and then pour over the steel cut oats and butter. Let sit for 20 minutes. Mix in the rolled oats, brown sugar, apples, apricots, ginger, salt and spices. Mix together egg, milk and vanilla and then add to oat mixture.

Pour into prepared pan and bake for 35-40 minutes until the center is set.

* These can often be found in the oatmeal section of the grocery store.
