Almond Toffee

  • 1 1/2 almonds, coarsely chopped toasted
  • 3 Cup butter, not margarine
  • 3 Cup sugar
  • 3 Tablespoon corn syrup
  • 1/2 Cup water
  • 2 Cup chocolate chips
  • 1 1/2 Cup finely chopped toasted almonds

Place almonds in microwave, one cup at a time, for 4 minutes until toasted - they will smell toasted and be a little bit brown. Chop as directed.

Line 2 cookie sheets with foil, extending foil over edges. Pam the foil. In large saucepan melt butter. Add sugar, corn syrup, and water. Cook and stir over medium-high heat to boiling.

Clip candy thermometer to pan. Cook and stir over medium heat to 290* degrees, soft-crack stage. Watch carefully after 29-80 degrees to prevent scorching. (I stir with a rubber glove on so my hand does not get splattered candy on it).

Remove pan from heat. Add coarsely chopped almonds. Pour candy into prepared pans. Sprinkle with chocolate chips. Let them melt then spread evenly over candy. Sprinkle with the finely chopped almonds. Allow chocolate to get firm at room temperature. Lift candy out of pan; break into pieces.

*Note: 290 degrees is the desired temperature near sea level. If you live at high altitude you will need to reduce this number. If you live around 5,000 feet above sea level, you will drop the tempterature by about 10 degrees to 280. Or better yet, just use the Cold Water Test.
