Almond Cheese Frosting (for Panda Bear Brownies)

  • 3 ounce Neufchatel Cheese (low fat cream cheese), softened
  • 1 Tablespoon margarine
  • 2 Cup powdered sugar
  • 3 Tablespoon milk
  • 1/2 Teaspoon almond extract, (or mint extract)
  • 1/2 Teaspoon vanilla
  • 2 drops green food coloring, or red food coloring

Combine ingredients in mixing bowl and beat until smooth.

Modification: Needed to make the frosting but didn't have any cream cheese. So, used 3 ounces of low fat cottage cheese, 2 tbs maragarine, 1 tbs milk and then everything else as before. Purred everything very thoroughly in the food processor. Turned out amazingly good though uncertain if it'll harden enough.


Chocolate Glaze:

In microwave melt 3 ounce semisweet chocolate chips and 6 Tablespoon margarine. Stir till smooth.
