Vegan Apricot-Orange Gel

Modified from Apricot-Orange Gel
- 32 oz apricot nectar (the Hero brand I got from Whole Foods worked really well)
- 3 inch cinnamon stick
- 3/4 tsp whole cloves
- 3 oz Orange flavored Bakol Jel Dessert
- 3 oz Lemon flavored Bakol Jel Dessert
- 22 oz mandarin oranges, drained
In a large pan, combine the nectar and cinnamon stick. Place the cloves in a tea ball and add to the nectar mixture. Bring to a boil, reduce heat, and simmer for 10 minutes, stirring occasionally. Remove cinnamon and cloves. Place Bakol Jel in a large bowl. Drain the Mandarin Oranges and place near the bowl. Add hot nectar mixture and stir until the Bakol Jel is completely dissolved. It will start to thicken fairly quickly at which point you must immediately add the Mandarin Oranges before it becomes too thick. Pour into a decorative 6-cup mold. Cover and chill.
