Sponge Cake

- 1 tsp lemon rind, grated
- 1 cup sugar
- 3 egg yolks
- 1/4 cup water, boiling
- 1 tbs lemon juice
- 1 cup flour
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 3 egg whites, beaten stiff but not dry
Preheat oven to 350 degrees.
Combine in order listed allowing to cool after adding boiling water. Bake about 45 minutes.
