Mini-Pineapple Upside Down Cakes
Adapted from mom's Pineapple Upside Down Cake
- 10 oz can tidbit size pineapple in pineapple juice or light syrup (reserve 1/4 cup of the liquid)
- 2 tablespoon butter
- 1/4 cup brown sugar
- 1/4 cup light corn syrup
- 3 maraschino cherries, halved
- 1/4 cup butter, at room temperature
- 1/4 Cup sugar
- 1 egg white
- 1/2 teaspoon vanilla
- 1/2 cup cake flour
- 5/8 teaspoon baking powder
- 1/8 Teaspoon salt
Make topping:
Drain pineapple reserving a 1/4 cup of the liquid. Melt butter in saucepan. Add brown sugar and white syrup and stir until they have dissolved. Pam a 6 cup muffin tin and pour about 1 tbs of syrup into each cup (you will have a little syrup left over). Place half of a cherry in the middle of each cup and arrange 4 pieces of pineapple around each cherry.
Cake:
Cream butter and sugar till light. Add egg white and vanilla; beat till fluffy. Add dry ingredients with the 1/4 Cup reserved pineapple juice. Beat well. Spread over the pineapple (I use a medium cookie scoop or about 2 tbs worth of batter for each muffin cup*). Bake at 350 degrees for 25 minutes or till toothpick comes out clean. Cool 5 minutes. Run a knife along the outer edge of each muffin cup and invert the muffin tin onto a plate. Serve warm.
- Make sure you don't put too much more than 2 tbs worth of batter per muffin cup or it will overflow. This batter doesn't have the support structure necessary to rise like muffins do so it will just ooze out toward all the other muffin cups.
