From Gem's Vegetarian Cooking

- 4 cups unsweetened shredded coconut
- 3/4 cup whole wheat pastry flour
- 1/3 cup old fashioned rolled oats
- 3 cups dates, chopped
- 1/3 tsp salt
- 1/4 cup honey (or orange juice)
- 1 2/3 cup nuts, chopped
- 3/4 cup water, cold
Mix all ingredients. Scoop onto ungreased cookie sheet with ice cream scoop. Bake 350 degrees for 20 minutes.
