About Gem's Vegetarian Cooking Wiki

This collection of vegetarian recipes started from my mother's and mother-in-laws recipe collection. As time has passed, I've added new recipes that I have enjoyed. While I started this project for my own benefit, this wiki is free for anyone to change/add recipes to as long as they recipes are vegetarian (click here for information about vegetarianism). Because of spam problems, you must have a user account to edit or add recipes. To request a user account, email me at gemstonelogan@gmail.com.

An asterisk (*) after an entry's title indicates that it's a copyrighted recipe from another source. I do not include the actual recipe for these titles. Instead, I'll link to WorldCat which will show the closest library with the specified cookbook and/or magazine. Also, I'll include any comments I have about the recipe and nutritional information for it.



Featured Recipe: Black Bean and Corn Salad

  • 30 oz black beans
  • 1 1/2 cup frozen corn, thawed
  • 1 medium red pepper, diced
  • 6 green onions, finely sliced
  • 1 jalapeno pepper, chopped fine
  • 1/2 cup cilantro, coarsely chopped
  • 2 med tomatoes, chopped (I usually use 1 can petite diced tomatoes)
  • 1 avocado, diced
  • 1/2 cup lime juice
  • 1/4 cup olive oil
  • 1 clove garlic, minced
  • 1 tsp salt

Mix together beans, corn, peppers, onions, and cilantro.
Mix dressing made up of lime juice, olive oil, garlic, and salt.
Pour on dressing over salad and allow to marinate several hours.
Just before serving, add tomatoes and avocado.

This nutritional information assumes 1 can petite diced tomatoes instead of 2 medium tomatoes.
