Coconut Syrup
From Gem's Vegetarian Cooking

- 8 oz unsweetened coconut milk, canned
- 8 oz coconut, sweetened and shredded
- 1/4 cup brown sugar
Combine in small, heavy saucepan. Bring to a boil, reduce heat, simmer 20 minutes stirring occasionally
Transfer to blender and puree until smooth.
