Carrot Cake
From Gem's Vegetarian Cooking

- 1 1/2 cups flour
- 1 cup sugar
- 1 Teaspoon Baking powder
- 1 Teaspoon Soda
- 1 Teaspoon Cinnamon
- 1/2 Teaspoon salt
- 2/3 cup oil
- 2 eggs, or 4 egg whites
- 1 cup carrots
- 1/2 cup Pineapple, crushed -- optional
- 1 Teaspoon Vanilla
- 1/2 Cup nuts, optional
- 1/2 Cup raisins, optional
Mix together. Bake at 350 degrees
