Blueberry Cobbler
From Gem's Vegetarian Cooking

- 2 tbs cornstarch
- 1/4 cup brown sugar
- 1/2 cup water
- 3 cups blueberries
- 1 tbs lemon juice
- 1 tbs margarine
- 3/4 cup flour
- 1/2 cup sugar
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 1/4 cup milk
- 1/2 cup butter, soft
Mix cornstarch, sugar, water, and blueberries. Cook until thickened. Add lemon juice and butter. Pour into Pam'd baking dish.
Mix remaining ingredients together and spoon over top of blueberry mixture. Bake for 30 minutes at 350 degrees.
