Blueberry Buckle
From Gem's Vegetarian Cooking
Adapted from Mommy Stone's recipe
- 1 cup all-purpose flour
- 1 cup white whole wheat flour (if not available, can use all-purpose instead)
- 2 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup butter
- 2/3 cup sugar
- 2 egg whites
- 1/2 cup non-fat milk
- 2 cups frozen blueberries
Topping:
- 2 cup powdered sugar
- 6 Tablespoon lemon juice
Cream butter and sugar. Add egg white and beat till light and fluffy. Add baking powder, salt and flour and then the milk. Mix well. Spread in Pam'd 8 X 8 inch pan. Top with blueberries. Bake at 350 degrees for 50-60 minutes.
Mix powdered sugar with the lemon juice till smooth. Pour over the top. Serve warm.
