Baked Maple Oatmeal
Inspired by King Arthur Flour Whole Grain Baking's Baked Oatmeal recipe.
This is good as a full breakfast or cut into 8 pieces instead of 4 and serve at a brunch with other items.
- 1/2 cup Steel Cut Oats*
- 1/4 cup Dried Apricots, Unsweetened **
- 2 tbs Butter (or Margarine if Vegan)
- 1 cups Water
- 1/4 cup Pure Maple Syrup
- 2 tbs Brown Sugar
- 1 tsp Vanilla Extract
- 1 pkg (about 12.3 oz) Lite Firm Silken Tofu
- 1 1/2 cups Rolled (Old-Fashioned) Oats
- 2 small Apples, unpeeled but cored and diced
- 2 tbs Crystallized Ginger
- 1/2 tsp Salt
- 2 tsp Cinnamon, ground
- 1/4 tsp Nutmeg, ground
- a sprinkle of Cloves, ground
Preheat Oven to 350 degrees and spray a 8 X 8 pan with Pam.
Boil the water and then pour over the steel cut oats, and butter. Let sit for 20 minutes. Meanwhile, puree the tofu, maple syrup, brown sugar, and vanilla until smooth. Mix together the rolled oats, brown sugar, apples, apricots, ginger, salt and spices. Combine all ingredients together and pour into prepared pan. Bake for 45-50 minutes until the center is set.
* These can often be found in the oatmeal section of the grocery store. ** In a pinch, 2 tbs raisins can be substituted
Make Ahead Instructions
After baking the oatmeal, let it cool completely. Cut into appropriate serving sizes and freeze.
