Asparagus with Garlic Sour Cream
From Gem's Vegetarian Cooking
- 2 lbs Asparagus
- 1 tbs Extra Virgin Olive Oil
- salt and pepper, to taste
- Garlic Sour Cream
Preheat oven to 400 degrees.
Snap off tough ends of asparagus. Chop into 2" pieces. Toss in olive oil and sprinkle with salt and pepper. Bake for 10-15 minutes or until the asparagus is barely tender.
Serve with Garlic Sour Cream to dip asparagus in.
