Apple Crisp
From Gem's Vegetarian Cooking
- 6 - 8 large apples, peeled and sliced
- 2 cups unsweetened pineapple juice
- 2 - 3 tbs cornstarch
- 2 cups quick oats
- 1 cup whole wheat flour
- 1/4 cup wheat germ
- 1/4 cup nuts, chopped
- 1/4 cup brown sugar
- 1/4 tsp salt
- 1 tsp vanilla
- 1/2 cup oil
- 1/4 cup water
Whip together pineapple juice (or apple juice concentrate) and cornstarch and pour over apples.
Combine the remaining ingredients and spread over apples.
Bake about 1 hr until golden brown at 350 degrees.
