Apple Bran Muffins
From Gem's Vegetarian Cooking

- 1 Cup diced peeled apples
- 1 cup All Bran cereal
- 1/2 cup sugar
- 1/4 cup oil
- 2 Eggs, Beaten
- 1 cup Bran
- 1/2 cup Flour
- 1/2 cup whole wheat Flour
- 2 Teaspoon Baking Powder
- 1/2 Teaspoon Salt
- 1/2 Teaspoon Cinnamon
Let all ingredients down to Bran soak for ten minutes. Finish mixing. Place in Pam'd muffin pans and bake for 20 to 25 minutes in 350 degree oven.
